Spanish Rice- family recipe




Ingredients:
4 cups white rice (I use calrose)
1 can of diced tomatoes
1/2 onion
3 cloves garlic
cilantro
cumin
1 tbsp.chicken base/cube of boullion **see directions for vegetarian options
canola or oliveoil

Directions:
In a large saucepan add 3 -4 tablespoons of oil to a heated pan (medium heat), then add the rice to the warm oil. The rice will need to brown for at least 3 minutes but you will need to keep mixing it around to avoid burning, add the onions and mix around for another 2 minutes to let them cook then add in the garlic and make sure to keep stirring. Once the rice has browned and the onions are soft, add in 5 cups of water and the can of tomatoes, bring to a boil. Add in chicken
base or bouliion cube I personally prefer to use a chicken base called "better than boullion" or if you are vegetarian you can substitute with vegetable base instead. Add a pinch of cumin and cover the pan. Lower the heat and let simmer until cooked, check your rice package for cooking lenght, usually about 30 - 35 minutes. Garnish with Cilantro
