Grilled Shrimp-my recipe





This is a simple and delicious grilled shrimp recipe that you can stick on the BBQ or cook indoor on a grill pan. Substitute the lemon with lime and sprinkle it with chile powder for some Chili-lime shrimp if you are in the mood for tacos and margaritas!


Ingredients:

1 lb. shrimp (peeled and deveined)

2-3 garlic cloves

3 tbsp. chopped fresh parsley

1/2 lemon

4 tbsp. Olive Oil

1 1/2 tsp. Kosher salt

1 tsp. crushed black pepper


Directions:Place the shrimp in a mixing bowl or container. Finely chop the garlic cloves and add them to the bowl along with the oil, parsley, salt, and pepper. Squeeze the 1/2 of a lemon over the mixture (use 1/2 lemon if it's a juicy one or more if the lemon doesn't yield much juice. Skewer the shrimp and place directly on the BBQ for 2 1/2- 3 minutes per side. For a bolder flavor, cover the mixture and allow to marinate in the fridge for 20 minutes.**If you are using bamboo or wooden skewers, soak them in water for 20 minutes to avoid scorching your skewers**

Spanish Rice- family recipe




Ingredients:
4 cups white rice (I use calrose)
1 can of diced tomatoes
1/2 onion
3 cloves garlic
cilantro
cumin
1 tbsp.chicken base/cube of boullion **see directions for vegetarian options
canola or oliveoil

Directions:
In a large saucepan add 3 -4 tablespoons of oil to a heated pan (medium heat), then add the rice to the warm oil. The rice will need to brown for at least 3 minutes but you will need to keep mixing it around to avoid burning, add the onions and mix around for another 2 minutes to let them cook then add in the garlic and make sure to keep stirring. Once the rice has browned and the onions are soft, add in 5 cups of water and the can of tomatoes, bring to a boil. Add in chicken
base or bouliion cube I personally prefer to use a chicken base called "better than boullion" or if you are vegetarian you can substitute with vegetable base instead. Add a pinch of cumin and cover the pan. Lower the heat and let simmer until cooked, check your rice package for cooking lenght, usually about 30 - 35 minutes. Garnish with Cilantro
